PT Azaki Food Internasional, yang dipuji sebagai produsen tempe terbesar di dunia, kini telah melangkah lebih jauh dalam menjembatani tradisi dengan masa depan yang berkelanjutan.

Baru-baru ini perusahaan ini mendapat label penting “Sustainable U.S. Soy” dari United States Soybean Export Council (USSEC), yang menandai era di mana pangan tradisional dan produksi ramah lingkungan saling terkait erat.

Dalam meraih label ramah lingkungan yang terhormat ini, PT Azaki tidak hanya memperoleh sertifikasi tetapi juga secara nyata menunjukkan bahwa esensi produksi tempe tradisional dapat berpadu secara harmonis dengan praktik berkelanjutan kontemporer.

Bagi Ibnu Wiyono, Country Director USSEC Indonesia, ini lebih dari sekedar penghargaan.

Hal ini merupakan perwujudan dari potensi yang tertanam dalam produksi pangan tradisional – untuk berubah dan beradaptasi, memastikan bahwa meskipun kita menikmati makanan lezat, kita juga turut serta dalam memelihara alam.

Menjalani proses yang rumit untuk mendapatkan label “Sustainable U.S. Soy” memerlukan komitmen yang teguh dari PT Azaki.

Pentingnya untuk memasukkan keberlanjutan ke dalam setiap aspek proses produksi, sehingga memerlukan investasi besar untuk menyelaraskan operasi pabrik dengan prinsip-prinsip sadar lingkungan.

Hasil dari upaya ini sangat besar dan luas jangkauannya. Tempe Azaki telah berhasil menembus pasar internasional, mengekspor 35 ton ke Jepang dan 15 ton ke Korea Selatan setiap bulannya, dengan peningkatan ekspor ke Taiwan dan Amerika Serikat yang dimulai pada tahun 2023.

Namun dampak dari kemenangan PT Azaki tidak hanya terbatas pada bidang perdagangan.

Sekretaris Jenderal Forum Tempe Indonesia (FTI), Muhammad Ridha, menilai tonggak sejarah ini bisa menjadi mercusuar bagi perajin tempe lainnya.

Hal ini merupakan bukti nyata bahwa keberlanjutan dan pengolahan makanan tradisional tidak berdiri sendiri-sendiri, namun pada kenyataannya, dapat saling mendukung.

Di dunia di mana keberlanjutan semakin terkait dengan kehidupan kita sehari-hari, tempe azaki menjadi simbol – kepatuhan terhadap kekeluargaan lingkungan dan kemungkinan tak terbatas yang muncul ketika tradisi dan keberlanjutan menari beriringan.

Di sinilah letak seruan kuat bagi Usaha Kecil dan Menengah (UKM) lainnya di bidang tempe dan sekitarnya.

Sebuah demonstrasi yang menggabungkan produksi tradisional dengan praktik-praktik berkelanjutan tidak hanya dapat dilakukan tetapi juga dapat membuka pintu ke pasar global, memastikan bahwa warisan kuliner kita bergema di seluruh benua.

Bagi konsumen, hal ini melambangkan sebuah pilihan – untuk secara sadar memilih produk yang tidak hanya menggugah selera namun juga tidak membahayakan Bumi kita.

Hal ini berfungsi sebagai pengingat bahwa setiap gigitan dapat menjadi isyarat halus untuk melestarikan alam, untuk memastikan bahwa makanan yang telah menyehatkan generasi dapat terus melakukannya dengan cara yang secara intrinsik berkelanjutan.
